An authentic and true laboratory, full of colours and perfumes in which our chef combines the deep knoledge of food and specific culinary techniques to transform every meal into a special event. Dishes in perfect harmony with the fisiological needs of our body, that will be able to de light the palates with incredibile surprises. In the Foodlab experiences and passions are shared, and this special place will no longer be taboo for our guests, and you will be able to discover the pleasure of learning the methods that make our menu a celebration of savours and aromas.
The kitchen has always been in my heart since childhood, perhaps rooted in my DNA seen many familiar food critics, chefs and confectioners. Degree in Digital Communication at the University of Milan, my life as a computer "as such" was brief. Right through my studies I came across a little by chance, in a book that changed my life: The China Study, very famous in America but never translated and published in Italy. A fascinating book that explains how the so-called "plant-based diet" (diet based on plant foods) drastically reduces the risk of chronic diseases and life-threatening, such as cancer, diabetes, stroke and obesity. From there began my thirst for knowledge wholesome food, that has not stopped since. I went from "Cascina Rosa" Cancer Institute of Milan, from La Sana Gola where I got the diploma of macrobiotic cook, from Michelin starred restaurants to Joia, where he still follow courses fascinating. It was a self-education that is culminating now with a University Master Degree in Vegetarian Nutrition and Dietetics, University Politecnica delle Marche. What fascinates me most is how the food we eat every day changes us and transforms us, determines every aspect of ourselves. It is therefore essential to take care of our diet, or at least have someone do it for us ... and that's exactly what I am doing personally.
