This soup is super low in calories and has lots of fiber, you can eat until you feel nice and full without worrying about overdoing it. Nobody ever got fat on healthy soup, trust us. To give it a hint of smoothness you can add some soy unsweetened cream.
Ingredients for 4 servings:
- 450 g zucchini or other green vegetables
- 120 g celery
- 140 g leek or onion
- 100 g peas
- Spices (basil, pinch of salt, pepper, parsley)
Cut all the vegetables into large pieces, put in a pot on high flame stove for a few minutes, when it just starts to boil leave for 5 minutes at the most, blend everything with spices and a pinch of salt and serve hot.
